1 unit Fish, large
1 unit Lemon
3 tablespoon Vegetable Oil
1 unit Onion, finely chopped
2 unit Garlic Cloves, crushed
3 tablespoon Curry Powder (ground cumin seeds, coriander seeds, turmeric, red chilli powder)
400 grams Tomatoes, chopped
1 tablespoon Peanut Butter, heaped
0.5 slices Green Bell Pepper
1 unit Green Chilli, chopped
2 slices Ginger
2 cups Chicken / Fish Stock
1 tablespoon Coriander, chopped
  Salt and Fresh Ground Pepper
Season the whole fish inside out with salt and pepper and place in a plate. Halve the lemon and squeeze over fish, cover with cling film and marinate for 2
*3 hours. Heat oil fry the onion and garlic. Reduce heat add the curry powder and cook stirring for 5 minutes. Stir in the tomatoes and the peanut butter, mixing well add the bell pepper, ginger, chilli and stock. Simmer for 10 minutes. Cut the fish into pieces and add to the sauce, simmer for 20 minutes or till fish is cooked. Transfer the fish to a serving dish. Add coriander to the sauce, adjust the seasoning. Cook for 5 minutes more and pour on the fish.
